Gumushane Cevizli Köme is made from the fruit of the mulberry trees that grow on the banks of the streams that connect to this valley, especially in the Kelkit and Harşit valleys. The quality of the product stems from the unique climate and soil of the region. Mulberry is boiled in copper cauldrons and its juice is taken, then milk and flour mixture is added and boiled. When it gets warm, honey is added to it and the mixture that the local people call herle comes out. The walnuts strung on strings are dipped into the mixture and dried. This process is repeated 4 times and the product becomes ready.
