Due to the steep terrain in Erzincan's Kemaliye - Eğin district, only a limited amount of mulberries are grown in the wild. They are collected, sorted and dried in July. Dried mulberries are boiled in cauldrons and turned into must. The must obtained is left to mature under the sun and becomes dense molasses. It does not contain any additives, preservatives or sugar. It can be used instead of sugar for desserts, made sherbet or mixed with tahini for breakfast.
